Oriental Beauty, sometimes called Bai Hao Oolong, is one of Taiwan’s most famous oolongs. It traveled to the West during the 19th century and was given its name by the queen of England, who admired the beautiful complexity of its flavor. This tea, made by an award-winning tea master in northern Taiwan, is semi-oxidized and has a signature aroma due to a tiny tea cricket. When the plant is nibbled by this insect, its leaves are imbued with a protective hormone that, after the intensive oxidation of tea processing, adds a muscat-like flourish to the brew’s aroma. Consider pairing this tea with cheese or liver pâté.
